Green Dragon is a greener oolong with low oxidization. Sun Withering For Green Dragon, mature leaves are plucked and then withered in the sun (weather permitting) to reduce moisture. Traditional Rolling Once suitable suppleness is achieved rolling techniques are applied which include wrapping the leaves in cloth then binding the cloth, then binding the cloth tightly into a ball shape. Roasting Leaves are then lightly roasted. Successive re-rolling and re-roastings are done to achieve the optimum shape and flavor. A final roast is given to complete the processing. Brewing Green Dragon Brew one teaspoon of leaf in twelve ounces of pure spring or filtered water at 185F for four minutes. Provides at least two infusions.
